jour·ney noun: an act of traveling from one place to another.
This is a word that has been applied to me the past six months. The journey I am on is going completely gluten free. Why? I have been recently diagnosed with Hashimoto's Disease. This is not terminal, but this has been the root of the problem of me getting pregnant. Hashimoto’s disease is an autoimmune disease that affects the thyroid. With the disease, the immune system makes antibodies that damage thyroid cells and interfere with their ability to make thyroid hormone.
Long story short, I have made the decision to go gluten-free since gluten can irritate the thyroid. What is gluten? Gluten is a protein found in wheat rye and barley. Because of genetic engineering for the past 20 to 30 years there is five times more gluten in wheat. We are not designed to consume that amount of gluten, our bodies do not break it down. In order to break down that much gluten you would need three stomachs like a cow (Your Alternative Doctor). That to me is gross.
All of that said, the journey has begun. It may take a little bit because it is difficult and takes some adjusting, but thankfully I have God who is directing my path, a husband who stands by me, a supportive family, and some amazing friends cheering me on.
Here it goes.
